Start with the final product

The best format is determined by what the ingredient must do in the finished product. A powder and a flake made from the same raw material can behave very differently in mixing, cooking, appearance and consumer perception.

When powder makes more sense

  • You need even dispersion through a dry mix.
  • The ingredient should not remain visibly separate.
  • You are making a premix, seasoning, soup base, dough or blend.
  • You need easier dosing in smaller formulations.

When flakes or pieces make more sense

  • You want visible vegetable identity.
  • Texture after rehydration matters.
  • The product is used in soups, instant foods, toppings or prepared meals.
  • The buyer wants a more visibly identifiable ingredient format.

What about particle size?

Even within powder or flakes, particle size matters. A fine powder behaves differently from a coarse powder; large flakes rehydrate differently from small cuts. Commercial buyers should discuss mesh size, cut size or intended application when consistency matters.
